酒露醉蝦 Drunken Prawns

酒露醉蝦

以下為大家介紹一款既容易處理,也無須生火的菜式,是以微波爐作烹飪工具,祗須依隨食譜的程序,就可做出一款味道好,賣相佳的味美佳餚。

準備時間: 15 分鐘

烹調時間: 2 – 3 分鐘

材料:

虎蝦 300g           

杞子 2 茶匙       

芹菜葉適量(裝飾用)

芹菜莖 (切碎 ) 1 湯匙

 酒露:

花雕酒 125ml       

上湯 100ml    

魚露 2 茶匙                     

糖 1  茶匙

玫瑰露酒1/4 茶匙 後下( 隨意 )

做法:

  1. 中蝦剪去頭部之刺針,用鋼針從頂部除去沙囊及剔去蝦腸(看下圖),於腹部用剪刀剪開一刀。
  2. 烹調前加入拌勻之酒露、芹菜莖碎及杞子。
  3. 放入 1100 w 微波爐,高火加熱約 3- 4 分鐘,待蝦頭轉色至熟。
  4. 從微波爐取出,如喜歡酒香可再加下少許玫瑰露酒,最後放上芹菜葉作裝飾。

:    時間須視乎蝦之大小,碟之重量及微波爐之火力(wattage)而加減。

Ingredients:

300g  tiger prawn           

2 tsp goji berries       

celery leaves (for decoration)

1 Tbsp celery, chopped

Shao Hsing hua tiao chiew sauce:

125ml Shao Hsing hua tiao chiew ( 紹興花雕酒 )       

100ml chicken stock    

2 tsp fish sauce                     

1 tsp sugar  

1/4 tsp  mei kuei lu chiew,  optional  ( 玫瑰露酒 )

Method:

  1. After removing the intestine of the prawns (see pictures below), rinse and dry them well. Slightly slit the inner side of the prawns. Trim prawn leg with scissors.
  2. Mix the Hua Tiao Chiew with chicken stock, fish sauce and sugar.
  3. Arrange prawns on serving plate and pour in mixture from step 2, then sprinkled with celery and goji berries.
  4. Cover with microwave wrap.
  5. Microwave 1100w, at HIGH for 3- 4 minutes.
  6. Decorated with celery leaves.
  7. Sprinkled with mei kuei lu chiew (optional).

Note:    The cooking time vary depending on the size of the prawns and the wattage of the microwave.
