以下為大家介紹一款既容易處理,也無須生火的菜式,是以微波爐作烹飪工具,祗須依隨食譜的程序,就可做出一款味道好,賣相佳的味美佳餚。
準備時間: 15 分鐘
烹調時間: 2 – 3 分鐘
材料:
虎蝦 300g
杞子 2 茶匙
芹菜葉適量(裝飾用)
芹菜莖 (切碎 ) 1 湯匙
酒露:
花雕酒 125ml
上湯 100ml
魚露 2 茶匙
糖 1 茶匙
玫瑰露酒1/4 茶匙 後下( 隨意 )
做法:
- 中蝦剪去頭部之刺針,用鋼針從頂部除去沙囊及剔去蝦腸(看下圖),於腹部用剪刀剪開一刀。
- 烹調前加入拌勻之酒露、芹菜莖碎及杞子。
- 放入 1100 w 微波爐,高火加熱約 3- 4 分鐘,待蝦頭轉色至熟。
- 從微波爐取出,如喜歡酒香可再加下少許玫瑰露酒,最後放上芹菜葉作裝飾。
註: 時間須視乎蝦之大小,碟之重量及微波爐之火力(wattage)而加減。

2 tsp goji berries
celery leaves (for decoration)
1 Tbsp celery, chopped
Shao Hsing hua tiao chiew sauce:
125ml Shao Hsing hua tiao chiew ( 紹興花雕酒 )
100ml chicken stock
2 tsp fish sauce
1 tsp sugar
1/4 tsp mei kuei lu chiew, optional ( 玫瑰露酒 )
Method:
- After removing the intestine of the prawns (see pictures below), rinse and dry them well. Slightly slit the inner side of the prawns. Trim prawn leg with scissors.
- Mix the Hua Tiao Chiew with chicken stock, fish sauce and sugar.
- Arrange prawns on serving plate and pour in mixture from step 2, then sprinkled with celery and goji berries.
- Cover with microwave wrap.
- Microwave 1100w, at HIGH for 3- 4 minutes.
- Decorated with celery leaves.
- Sprinkled with mei kuei lu chiew (optional).
Note: The cooking time vary depending on the size of the prawns and the wattage of the microwave.
