現今烹飪已不再祗局限於地域色彩及用料,以下介紹的菜式,採用了日式及西式的用料和烹調方法。


準備時間: 20 分鐘

烹調時間: 15 – 20 分鐘

材料:

豬扒 (Pork cutlet)  500 g

香草麵包糠 (Parsley Breadcrumbs) 適量

什菜嫩葉 (Mixed leaves)  適量

英式芥茉醬適量

水份適量(開芥茉醬用)

醃料:

味醂(mirin) 1 湯匙

豉油 1 湯匙

海鹽 1/2 茶匙

生粉 2 茶匙

胡椒、油各適量

香草麵包糠: (Parsley Breadcrumbs)

鮮白麵包糠 85g

牛油 25g

鹽少許

意大利香芹 (切碎) 2湯匙 (Italian flat-leaf parsley)

蒜茸 1 茶匙  ( 以上全部用打拌機打碎 )

黑芝麻醬料:

烘香黑芝麻 6 湯匙

蜜糖 1 湯匙

做法:

  1. 連焗盤預熱焗爐200度。
  2. 豬扒去骨醃味備用。
  3. 炒香芝麻用打拌機打碎,加入蜜糖拌勻備用。
  4. 將焗爐轉為 grill 火 250 度,放入豬扒燒焗 10-12 分鐘至金黃,(或放入熱鑊加蓋煎焗 10-12 分鐘) 試生熟。
  5. 取出塗上芝麻醬及鋪上香草麵包糠略壓實,再放回焗爐焗,燒焗至表面呈金黃,切件配以芥茉醬汁及什菜嫩葉沙律( mixed leaves)供食。

註:   製作香草麵包糠,留意香草保持乾身,焗烘時才會香脆,另可做多些存放冰櫃,方便隨時取用。

Ingredients:

500g pork cutlet

Parsley breadcrumbs

Mixed leaves

English mustard (diluted with some cold water as sauce)

Seasoning for pork cutlet:

1 Tbsp mirin

1 Tbsp light soy sauce

1/2 tsp sea salt

2 tsp potato starch

Papper, olive oil

Parsley Breadcrumbs :

85g  fresh white breadcrumbs

25g  butter

sea salt

2 Tbsp  chopped, Italian flat-leaf parsley

1 tsp finely chopped, garlic

Black sesame paste:

6 Tbsp black sesame

1 Tbsp honey

Method:

  1. Placed baking trays in the oven. Preheat the oven to 200°C
  2. Season the pork cutlet.
  3. To make the parsley breadcrumb, put fresh breadcrumb, butter, parsley, garlic in a processor and whiz until chopped.
  4. To make the black sesame paste. Stir-fry in dry clean wok until the aroma of sesame comes out. Finely ground the black sesame with  grinder and then Mixed with honey.
  5. Transform the oven to grill 250°C. Put the pork cutlet on the hot baking trays and cook for 10-12 minutes until golden brown.
  6. Remove pork cutlet from oven, add sesame paste with parsley breadcrumbs on top. Put it back in preheated oven and bake until breadcrumbs turns golden brown.
  7. To serve cut pork cutlet into strips, garnished with mix leaves, accompanied with mustard sauce.

Note:  Parsley should be sufficiently dry before mixing with the breadcrumbs.
