黑芝麻卷

食療在現今中西方都非常普及,我們應該以食物為療藥,以療藥為食物,選對食物對很多慢性疾病都有幫助。也因此令很多人開始注意到,由自己親手選料烹調食物給自己及心愛的家人朋友吃,是多有意義的事,而從中也領略到莫大的樂趣。黑芝麻是一種藥用價值很高的食物,中醫稱它有滋補肝腎、潤五臟、補腦、黑髮及益壽延年之療效。記得以前有一種舊式甜品黑芝麻卷,因須人手製作費時而大概利潤也不高,所以現在已很少見了!不如我們就趁假日在家試試製作及給它添上一點色彩,使它再呈現眼前吧!

準備時間 10 分鐘

烹調時間 30-40 分鐘

材料

黑芝麻 100g

馬蹄粉 125g

水份 500ml

冰糖 110g

油 2 茶匙

錫紙盆 2 個 17cm x17cm

乾玫瑰花瓣適量

做法:

  1. 黑芝麻洗淨涼乾慢火炒香,連同 250 ml 水份打拌至幼滑,將馬蹄粉、油加入拌勻。
  2. 小鍋加入 250 ml 水份,放入冰糖碎浸至溶化,再將糖水煲滾,取起將滾熱糖水沖入芝麻漿內,邊沖入邊不停攪拌勻。
  3. 將已掃油之錫紙盆蒸熱,加入一湯芍芝麻漿,薄薄一層搪勻盤底,加蓋蒸5分鐘,取出整盤放凍水上放涼,再蒸下另一盆。
  4. 將放涼的芝麻粉皮捲成粉條狀,切成適合長度,灑上玫瑰花瓣即可供食。

註:

  1. 芝麻須買原色靚芝麻比較好,如購買已烘好的則不須清洗,祗須略為炒香即可。
  2. 芝麻先用 coffee and spice grinder 打碎才加水效果比較好,不須過濾也幼滑。
  3. 冰糖浸至溶化才煲滾,可保持水份的準確度。
  4. 留意購買純正馬蹄粉,才能做出爽口麻芝卷。

Ingredients:

100g   black sesame

125g    water chestnut  flour

500ml   water

110g   rock  sugar

2  tsp  oil

2  17cm x 17cm  aluminium foil container

Dried roses

Method:

  1. Rinse, drain and air-dry black sesame. Stir-fry in dry clean wok until the aroma of sesame comes out. Ground black sesame with 250ml water in a grinder to form a fine solution. Stir in water chestnut flour and oil. 
  2. In a small bowl dissolve rock sugar with 250 ml water then bring to the boil, add boiled sugar water to sesame mixture and stir well.
  3. Greased the aluminium foil container and steam to preheat, Pour a layer of sesame mixture evenly into container, steam each layer for 5 minutes with cover or until set ,put the container in cold water for 1 minutes to cool down, then do the rest in the same way.
  4. Rolled up the sesame roll and cut into desired length, decorated with dried roses .
