檸香豉味拌涼瓜 Bitter Melon Salad with Black Bean and Lemon Zest

檸香豉味拌涼瓜

苦瓜含有豐富的維他命C,有助增強免疫力。中醫認為它性寒,可消暑清心明目,所以又稱苦瓜為涼瓜,苦瓜味道苦中有甘,它是比較特別的食材,有個別人士很怕它苦,但喜歡的就是愛它苦中有甘,味覺上有苦盡甘來之感。這味檸香豉味拌涼瓜味道清新油份少,所以很適合夏天食用。

準備時間: 5 分鐘

烹調時間: 5 分鐘

材料:    

涼瓜 600g        

有機即食豆豉 1 湯匙   

蒜茸 1 粒

檸檬皮絲 1 個份

調味:         

麻油 2 茶匙      

味醂 (mirin) 3 茶匙

糖 1/4 茶匙

雞粉 1/4 茶匙 (隨意)

鹽 1/4 茶匙

做法 :

  1. 涼瓜切片 (瓜囊不要) 投入大滾水內, 汆水至轉色立即取出浸泡冰水,用廚紙吸乾水份備用。
  2. 將涼瓜放於大碗,先加入糖、雞粉、鹽拌勻,再放入餘下各調味料拌勻,然後拌入蒜茸豆豉拌勻。
  3. 將涼瓜放於盛器上,最後灑上檸檬皮絲裝飾,即可供食。

註:

  1. 採用有機即食豆豉效果比較好。
  2. 涼瓜汆水時間須視乎涼瓜厚薄而定,如想爽脆些祗須轉色即可。
  3. 因作涼菜,祗取用綠色部份不用瓜囊,可使涼瓜片汆水後效果好些。

Ingredients:    

600g bitter melon, sliced       

1 Tbsp ready to eat organic black bean   

1 tsp finely chopped, garlic  

1 grated lemon rind

Seasoning:         

2 tsp sesame oil       

3 tsp mirin

1/4 tsp sugar

1/4 tsp chicken powder, optional

1/4 tsp  sea salt 

Method:

1      Bitter melon blanch in hot water until color changed. Then rinse with cold water.

2      Dry the bitter melon VERY well with paper towel.

3      In a mixing bowl mix the bitter melon with seasoning, then  add in the organic black bean, garlic and mixed all together 

4      Place the bitter melon on a serving plate. Sprinkle grated lemon rind on the top and serve.

Note:      For better effect the ready to eat orgnaic black bean is always my first choice.

    平時我都怕涼瓜苦不過這個有味醂和檸香好像十分好味!
