Adzuki bean (red bean) 紅豆: 在亞洲地區是一種常用於烹調的豆實,小小紅紅的紅豆,在豆類中是偏陽性的一種,曾經聽過紅豆可以消浮腫嗎? 這是因為紅豆可以提高腎臟的水份代謝功能,並可使身體加速將多餘水份排出體外。在中國南方一帶,有一款深受歡迎的糖水名為”陳皮紅豆沙”,相信很多人都吃過。而在日本想必就是以紅豆製成蜜紅豆作餡料的”抹茶果子”最為人熟悉及喜愛了。抹茶果子翡翠綠的外皮,紫紅的餡料再配上薄薄一層霧白,單就色澤已經很美,紅豆餡配以麥芽糖的清甜,抹茶粉的回甘及糯米粉的柔軟香Q,它確是味道樸實、口感豐富的一道甜點。

蜜紅豆:

浸泡時間: 4-6 小時

烹調時間: 45-60 分鐘

材料:

紅豆 250g

冰糖 80g

麥芽糖 2 湯匙

做法:

  1. 紅豆沖洗淨,加入凍水浸泡 4-6 小時。
  2. 倒去浸泡水份,加凍水過面約5cm,開蓋大火燒開至滾,改成細火將紅豆煮至軟身而尚餘足夠溶化冰糖之水份。
  3. 加入冰糖煮至糖溶及水份收乾,離火稍候片刻,即拌入麥芽糖輕手拌勻。

抹茶果子:

製作時間: 30 分鐘

材料:

糯米粉 125g

抹茶粉 1 茶匙  

幼白糖 80g

水份 200ml

油 1 湯匙

蜜紅豆適量

生粉適量(撲面用)

做法:

  1. 蜜紅豆涼透後揉成適量大小之丸子狀,放冰櫃急凍至表面略呈硬身備用。
  2. 糯米粉`抹茶粉及糖,拌勻於一個適用於微波爐之膠盒內。
  3. 徐徐拌入水份開成粉漿,最後拌入油 1 湯匙。
  4. 將粉漿置於1100w 微波爐內,以中高火加熱2分鐘,取出以木棒子攪拌,再放回微波爐加熱3分鐘,取出再以木棒子椿搗勻,再加熱3分鐘。
  5. 取出再以木棒充份椿搗勻,待粉糰稍涼用沾上少許油之剪刀,剪成小份粉糰包入蜜紅豆餡,再於抹茶果子表面輕撲上一層薄薄生粉即成。

Sweet adzuki bean:              

Soak : 4-6 hour

Cooking: 45-60 minutes

Ingredients:

250g adzuki bean

80g rock sugar

2 Tbsp maltose

Method:

  1. Rinse and clean adzuki bean, then soak in a bowl of cold water for 4-6 hours.
  2. After 4-6 hours, drain and add fresh cold water to 5cm above the adzuki bean, then bring water to the boil over high heat with no cover. Change to low heat, simmer until bean soften and remain with sufficient water for the next step.
  3. Add rock sugar to softened bean and simmer until sugar dissolved and water is reduced. Remove from heat, allow to cool down a little while, then stir in maltose gently until mixed.

Green tea dumpling:                     

Total time: 30 minutes

Ingredients:                                 

125g glutinous rice flour

1 tsp matcha (green tea  powder)            

80g caster sugar

200ml water

1 Tbsp oil

Sweet adzuki bean

Potato flour, for coating

Method:

  1. When sweet adzuki bean cool down, form them into individual small ball, place in freezer until the bean ball become more firm.
  2. In a microwave proof plastic box or container, mix the glutinous rice flour, matcha and caster sugar together.
  3. Stir water gently into the mixture in step 2 to form a soft dough and then stir in oil.
  4. Cook soft dough in microwave 1100w over medium high heat for 2 minutes. remove from heat then stir with wooden stick, return it to microwave cook for 3 minutes, remove from heat for the second time then smash with wooden stick, then return to microwave cook for another 3 minutes.
  5. Remove from microwave and smash well for the final time, then set aside and let it cool down for a while. Coat scissors with a touch of oil, cut dough into small individual portion. Press the dough and stuff with sweet adzuki bean, then seal into ball shape.  To serve sprinkle with potato flour.

    Such detailed instructions! I love the look of these dumplings, and they would be a great dessert.
