Fenne and Pear with Hazelnur Salan .Tomato  Salad with Almond  oil

今日是蛇年農曆大年初一,先向各位拜年,祝願世界和平,人人健康快樂笑呵呵! 有很多人習慣於大年初一吃素,我今次介紹一款味道清新,選料也非常健康的沙律,希望大家會喜歡。

準備時間 : 15 分鐘

材料:         

茴香(fennel) 400g       

啤梨(pear) 1個          

海鹽 1 茶匙                         

Mayonnaise 20ml     

榛子仁(略切碎) 50g

蕃茄 350g           

味醂(mirin) 3 茶匙    

杏仁油(沙律用) 20ml  (almond oil)   

Mayonnaise 3 茶匙     

胡椒碎、鹽各適量

做法:

  1. Fennel洗淨,祗取白色部份刨成薄片,洒上海鹽 1 茶匙用手搓揉至軟身,稍候片刻壓榨去多餘水份。
  2. 啤梨洗淨刨成薄片,連同茴香片與mayonnaise 20ml拌勻。 
  3. 蕃茄放入滾水一汆,取出去皮及籽,切成約 1cm 小粒狀,加入味醂快煮至收乾水份但須保持小粒狀,待涼加入海鹽、胡椒及3 茶匙mayonnaise拌勻。
  4. 各料放盛器上,洒上杏仁油及榛果仁碎即成。

Preparation : 15 minutes

Ingredients :         

400g fennel (sliced, just keep the white bulb)      

1 pear (sliced)          

1 tsp sea salt                         

20 ml mayonnaise      

50g hazelnut(coarsely chopped)

350g tomato (peeled, seeded and diced)          

3 tsp mirin    

20ml  almond oil   

3 tsp mayonnaise      

sea salt and pepper

Method:

  1. Mix the sliced fennel with 1 teaspoon of salt, then drain the liquid and keep the fennel only.
  2. Mix the pear slices with fennel and mayonnaise.
  3. Put the tomatoes into boiling water for the short while, then peel the skin and remove the seeds.  Cut the tomatoes into 1cm cubes,  add mirin and cook until juice is reduced but make sure the tomatoes are still in cubes. 
  4. After the tomatoe cubes cool down, mix in mayonnaise, a pinch of salt and pepper to taste.
  5. Place the fennel, pear and tomato onto serving plates, and then sprinkle with almond oil and hazelnuts to serve.
