養生曲奇餅 Chewy Longyan Cookies

曲奇餅(cookies)是頗受大家喜愛的零食,但一般含糖及牛油很重,不宜多吃。而我介紹的是採用杏仁油、麥冬、杞子、核桃及龍眼肉等製成的保健曲奇餅。麥冬有清熱、養陰及益胃作用,龍眼肉安神及增強記憶,杞子明目潤肺,而核桃因核桃油含不飽和脂肪,有預防動脈硬化的作用。將這餅食配搭咖啡或茶,享受一個休閒的下午或將這自製的曲奇餅包裝好,送給親友們作為禮物,既健康亦別具心思,是很不錯的主意。

準備時間 : 1 5 分鐘

烹調時間 : 8 – 10 分鐘

材料:

全麥普通麵粉 135 g

雞蛋 1 個

純杏仁油 100ml  (Virgin Almond Oil )  或 任何植物油

海鹽 1 g

黃糖 90 g  (Firmly packed brown sugar)

燕麥片 90 g ( Rolled Oats)

熱水 2 茶匙

梳打粉 1/4 茶匙 (Baking soda)

泡打粉 1/4 茶匙 (Baking power)

杞子 50 g

合桃 70 g (切細)

桂圓肉 50 g (切細)

麥冬 25 g

水份 250 ml (煮麥冬用)

麥芽糖 1 湯匙

做法:

  1. 麥冬洗淨,用 250 ml 水份浸泡1小時,用剪刀剪成小粒狀,連同浸泡之水份,慢火煮至水份收乾加入麥芽糖拌勻備用。
  2. 雞旦、糖、鹽,用電打旦器打拌約 1 分鐘,至轉淡黃色,加入油份打拌勻。(圖二)
  3. 以熱水 2 茶匙拌勻梳打粉(baking soda),加入雞旦糖漿內拌勻。
  4. 篩入乾粉、泡打粉(baking power)以切拌法拌勻,再加入燕麥、合桃碎、杞子、圓肉、麥冬,拌勻成 一軟麵糰,放雪柜約1小時。(圖四)
  5. 將麵糰揉成小球狀,壓平成約 4 cm小餅狀(圖六),放於焗盤上,每個隔約 3 cm,放入 175 度焗爐。
  6. 焗 8 – 10 分鐘,(如喜歡餅軟身些,焗 8 分鐘即可) 取出放涼架待涼。(圖)

Cooking : 8 – 10 minutes

Ingredients :

135 g  wholemeal plain flour

1 egg

100 ml virgin almond oil or any vegetable oil

1 g  sea salt

90 g firmly packed brown sugar

90 g rolled oats

2 tsp hot water

1/4 tsp baking soda

1/4 tsp baking power

50 g goji berries

70 g walnut, crushed

50 g dried longan

25 g mai dong

250 ml water (for preparing the mai dong)

1 tbsp mai ya tang maltose

Method :

  1. Wash and clean mai dong then soak in 250 ml of water for an hour, cut mai dong into small dices with scissors then simmer over low heat until mai dong absorb all the water then mix with maltose and set aside.
  2. Mix egg, brown sugar, salt with electric mixer then add almond oil and mix well (see picture 2).
  3. Dissolve baking soda with 2 tsp hot water, then mix with the mixture from step 2.
  4. Sift flour then mix with baking power (see picture 3).  Add mai dong from step 1, rolled oats, walnut, goji berries and dried longan and mix them into a dough, then refrigerate for an hour. (see picture 4)
  5. Roll dough into small balls (see picture 5), place on greased oven trays or baking paper, allow about 3cm between each cookie.
  6. Bake in oven at 175°C for 8 – 10 minutes or until lightly coloured. Stand cookies for few minutes then remove to a wire rack to cool (see picture 6).
