蟹肉冬蓉羹 Winter Melon Soup with Crab Meat and White Truffle Oil

冬瓜全身都是寶,冬瓜皮可利水消腫、清熱解暑; 冬瓜籽可清肺化痰、利濕排膿; 冬瓜肉可利水、清熱、消痰、解毒。將冬瓜入饡因其肉質細嫩,味道清鮮,它和很多食材配搭都能產生很好的效果,其一便是螃蟹,冬瓜味清配蟹肉鮮甜可是最佳配搭。

準備時間 : 15 分鐘

烹飪時間 : 35 分鐘

材料

冬瓜(淨肉) 1 kg

蟹肉 125 g

蛋白 2 只

上湯 750 ml

水份 500 ml

薑 2片

松露菌油、海鹽、胡椒粉各適量

馬蹄粉芡料:    

馬蹄粉 4 湯匙

水份 125 ml

做法:

  1. 冬瓜磨茸連同薑、上湯、水份,煲約30分鐘,棄去薑片。
  2. 蟹肉以少許胡椒粉、2 茶匙蛋白、1 茶匙油拌勻備用,另將蛋白輕輕拌打勻及以篩過濾備用,馬蹄粉用水浸透備用。
  3. 食用前滾起冬瓜茸,將馬蹄粉水吊入埋芡至濃度適中,加入蟹肉及蛋白輕輕拌勻,以適量海鹽調味。
  4. 將冬蓉羹放於盛器,加入少許松露菌油即可供食。

 註:冬茸羹所須水份,要視乎冬瓜之含水量而調節。

Ingredients:

1 kg  Net weight peeled and seeded winter melon

125 g crab meat

2 egg white

750 ml chicken broth

500 ml water

2 slices ginger

white truffle oil, sea  salt and pepper to season

Water chestnut flour mixture:    

4 tbsp water chestnut flour

125 ml water

Method :

  1. Wash peeled and seeded winter melon,  then grated and cook with ginger, chicken broth and 500ml of water for about 30 minutes or until tender, discard ginger.
  2. Season the crab meat with pepper, 2 tsp egg white, 1tsp oil, then set aside.
  3. Slightly beat the remaining egg white and strain through a fine sieve and set aside.
  4. Soak and soften water chestnut flour with 125ml of water then mixed.
  5. Bring the winter melon broth to a boil, then add water chestnut flour, crab meat and egg white, stir gently, season with sea salt.
  6. Served in soup bowl and drizzle with white truffle oil.

    This looks so delicious! The addition of crab meat will definitely help to enhance the taste.
