芝麻蛋白脆餅

芝麻的營養價值很高,既可食用又可作油料,它含有豐富的磷脂和亞油酸,不但可補腦、增強記憶力,美容護膚、潤腸、養髮等,研究發現芝麻還有抗氧化的元素硒,它有增强細胞抵抗有害物質的功能,從以起到延年益壽的作用。而芝麻又以黑芝麻為佳,以下介紹的這款零食,採用黑、白芝麻配合蛋白作主耍材料,製作非常簡單容易,製成後只须留意一點,必須放在雪櫃存放,即可保持鬆脆可口。

準備時間 : 7 – 8 分鐘

烹飪時間 : 7 – 8 分鐘

材料:     

黑芝麻 150 g

白芝麻 50 g

蛋白 100 g

幼糖 80 g

普通麵粉 30 g

海鹽少許

油份 3 湯匙

做法:

  1. 預熱焗爐攝氏 170 度 。
  2. 蛋白及幼糖輕手拌至幼糖溶化,加入餘下各料拌勻,放雪框 1 小時以上。
  3. 鋪一張不沾烘焙纸於桌面,將一大匙漿料放於紙上,面再蓋上一張保鮮纸,用麵桻開薄 。
  4. 放入焗爐中格,以 170 度焗 7 – 8 分鐘至呈金黃色,趁熱快手剪成小塊,或放涼架上待涼至脆身,用手開成不規則形狀。涼透後存放雪櫃,即可保持鬆脆可口。

Ingredients:     

150 g black sesame

50 g white sesame

100 g egg white

80 g caster sugar

30 g plain flour

sea salt

3 tbsp 0il

Method:

  1. Preheat the oven to 170°C.
  2. Mix the egg white and caster sugar lightly until the sugar melted, then stir in sesame, salt and oil.  Put the mixture in the refrigerator for a minimum of one hour.
  3. Put a big spoonful of mixture onto non-stick baking paper and cover with cling wrap, then use a rolling pin to spread/flatten the mixture to 1 – 2 mm thick.
  4. Bake for 6 – 8 mins or until golden. Cut the sesame crisps into pieces while it is still hot, or break them into pieces after cooling them on a wire rack.  Store in refrigerator once completely cooled to keep them crispy.
